# Sanitary transportation duty

A term used when buying food distribution.

The federal rule that splits responsibility for food in transit four ways.

Shippers, loaders, carriers and receivers each carry a defined part of keeping food safe on the road, and one company is often three of the four at once. The substance is temperature control for food that needs it, vehicles and equipment that do not contaminate what they carry, and written procedures with records behind them. A buyer should ask which of the four hats this business wears on each lane and where those written procedures live, because the duty follows the function a party performs and not the name on the invoice.
